Heat coconut oil in a thick-bottomed pan. Add the crushed shallots, ginger, garlic, dry red chillies, and curry leaves.Sauté until the onions turn golden brownand the raw smell disappears. reduce the heat to low.Add the turmeric powder, chilli powder,and coriander powder. Sauté for a minute or until the raw smell of the spices is gone.add the shredded meat to the panand mix well with the spice mixture.Cook the meat on a low to medium flame,stirring frequently until it becomes dry and crispy.finally, sprinkle the garam masala powder,fennel powder (if using), and crushed black pepper over the meat. Mix everything thoroughly and cook for an other minute.Taste and add salt if necessary, keeping in mindthe initial salt content of the dried meat.The Idiyirachi is ready to serve hot with rice, kanji, or puttu.The dry preparation ensures it can bestored in an airtight container for a longer shelf life
